    "Raúl, a creator of unique flavors of the sea"

    Raúl presents a stylistically clear and traditional cuisine that is underpinned by avant-garde techniques, most importantly the product is above all the focus of attention: "We cook as we think but do not think about how we cook". Raúl designs a new menu six times a year. As a result, the best of the best will be served, according to the season and the inspiration of the boss. Exclusively regional products are used for this changing 19-course menu, in particular sea food specialties of the Azahar mediterranean coast between Barcelona and Valencia as well as the fresh ingredients offered by the fertile Valencian soil. Due to this cooking, Resino won the Spanish Chef of the Year title in 2016.
